Homemade Pumpkin Spice Latte Recipe

Ingredients

  • ¾ cup (6 oz) strong-brewed Pumpkin Spice Coffee
  • ¾ cup whole milk (or oat milk)
  • 2 tbsp pumpkin purée (not pie filling)
  • 1–2 tbsp maple syrup or brown sugar, to taste
  • ¼ tsp pumpkin pie spice, plus a pinch to finish
  • ¼ tsp vanilla extract
  • Whipped cream (optional)

Instructions

  1. Brew strong. Use about 2 tbsp of ground coffee per 6 oz of water so the coffee holds up to the milk.
  2. Warm the pumpkin. In a small saucepan over medium-low heat, whisk the milk, pumpkin purée, maple syrup and pumpkin pie spice. Heat until it steams, 3–4 minutes. Don't let it boil.
  3. Froth. Take it off the heat and stir in the vanilla. Froth with a handheld frother, or shake it in a sealed jar for 30 seconds.
  4. Combine. Pour the coffee into a big mug and top with the pumpkin milk.
  5. Finish. Add whipped cream and a pinch of spice if you like.
Camp tip: At the deer stand or around the fire? Mix the pumpkin, spice and sweetener into a jar at home. At camp, heat it with milk in a pot and pour it over percolator coffee.

Brew the coffee strong and let it cool. Whisk the pumpkin, sweetener and spice into cold milk, pour it over ice, then add the coffee.

Dairy-free pumpkin latte

Oat milk froths best and has a natural sweetness that fits pumpkin. Almond milk works too, but it gives a thinner foam.

Lighter version

Skip the maple syrup and whipped cream. Because the coffee is already lightly flavored, a splash of milk and a pinch of pumpkin pie spice gets you most of the way there.
